Roaster's comment: Costa Rica has long been one of my favorite origins for specialty coffee, with its high-altitude farms producing sweet and balanced cups. This H3 Natural stood out for its slightly higher acidity, which allowed me to extend the roast and highlight both texture and clarity.

At the heart of this lot is H3 Milenio, a rare and experimental hybrid that coffee lovers should know about. Bred from Sarchimor and Ethiopian Rume Sudan, this variety was developed by CATIE (Centro Agronómico Tropical de Investigación y Enseñanza), Costa Rica’s leading centre for sustainable agricultural research. Milenio was created to combine resilience in the field with exceptional cup quality, delivering both innovation and promise for the future of specialty coffee.

This particular H3 Milenio comes from Santa Lucia Farm in Zarcero, West Valley, grown at 1,600–1,750 MASL and naturally processed at the renowned Helsar de Zarcero mill. The result is a cup that is delicately complex and crisp, with brisk, softly tart acidity and a silky mouthfeel.
