Roaster's Comment:
Las Flores Chiroso Anaerobic Natural is a fascinating coffee. This unique varietal, combined with the Jhoan Vergara's deep understanding of fermentation, brings out the very best of its genetics in a bold and expressive way. It took several attempts for me to refine the roasting profile, this is version four that youβre tasting.
Expect deep, dark red fruit characteristics, reminiscent of the El Diviso Sidra Natural we released previously, but with a cleaner structure, smoother finish, and bolder overall flavour.

About the coffee:Β
After harvest, the cherries undergo 12 hours of aerobic fermentation, then 24 hours submerged in tanks. They are transferred to sealed containers for 48 hours of anaerobic fermentation. At peak development, a thermal shock halts microbial activity, followed by soaking. Drying is managed with 24 hours of mechanical drying and seven days of sun, then sealed in plastic bags for 22 days to stabilise.
Chiroso is a rare Ethiopian landrace, known for elongated beans and expressive aromatics. In the cup, it offers bright fruit sweetness and aromatic lift, with notes of cranberry, hibiscus, tropical fruit, and subtle wine. Rather than chasing funk, this processing preserves clarity while amplifying fruit and floral complexity, highlighting Chirosoβs unique genetics in an exotic yet refined way.
