About the coffee:Β
At Finca Las Flores, this Aji Bourbon is all about timing and restraint. The cherries first go through a 24 to 48 hour oxidation, then a 48 hour low oxygen anaerobic fermentation where the flavour really builds. The key moment is the thermal shock hot water wash, used to stop fermentation right at its peak.
That quick finish locks in the most delicate and complex aromatics, keeping the cup clean and precise rather than overly funky. Expect bright, lively acidity, clear fruit and floral character, and a rich syrupy to creamy texture that lingers without feeling heavy.
